Preparation Guidelines:

Important: Pearls must be fully cooked before serving. Do not serve dry pearls.

  1. In a large pot place 4 cups of water and bring to a boil.

  2. Slowly add ½ cup of tapioca pearls while stirring. Do not add all at once.

  3. Stir until pearls float to the top.

  4. Reduce heat to medium, cover and cook for 30 minutes.

  5. Turn off heat and allow pearls to sit in hot water for a further 30 minutes.

  6. Strain and rinse with lukewarm water (do NOT use cold water).

  7. Drain and mix with sweetener (Brown Sugar Syrup recommended).

For best commercial results, batch cook according to projected daily volume and hold in syrup ready for service.
